Compound Butter

Ingredients:
2 entire heads of garlic
3 tbsp of minced shallots
2 tbsp of red pepper flakes
2 tsp of lemon juice
3 tbsp of minced green onion
1 tsp of Worcestershire sauce
2 tbsp of dried oregano
2 sticks of salted butter
salt and pepper
4 tbsp of olive oil
Small frying pan
food processor/blender
some tin foil
small plastic container

Procedure:
1. With a serrated knife, cut the top off of each head of garlic so that the raw cloves are exposed. Wrap the heads in tin foil but leave the top raw garlic exposed. Cover the raw garlic in a dash of olive oil, salt and pepper. In an oven preheated to 350 degrees Fahrenheit (not Celsius because I'm American), bake the garlic heads in foil for 30 minutes. Remove from oven and set aside to cool off.
2. In a small frying pan saute the shallots until fragrant. Remove from heat immediately.
3. Once the garlic is cool, carefully squeeze the garlic confit out into a food processor/blender. Add the shallots too. Cut the butter in small cubes for easy mixing and toss it in there too. Add everything listed as an ingredient as well into the blender and mix until fine. It should be gooey and lukewarm because of the garlic and shallots.
4. Remove the compound butter from the blender (try not to cut yourself) and store in a small plastic container. Store container in the fridge to solidify and harden.
Now you have the perfect flavored butter to put on toast, mashed potatoes, steak, fart jokes, steamed veggies, and lobster.
