Stack poise, ideally havels, get your highest damaging weapon and run up directly to them. Tank their attacks and attack until it dies, heal and wait for the next. Do not use summons, it speeds up spawns and gives them more health. It might be a good idea to grab some charcoal pine resin, the female undead merchant sells them for 500 souls apiece. Good luck.
