If you truly knew the lore as you seem to be claiming you would know that each person goes through a process of developing and creating their lightsabers so of course their will be some that are different. Darth Maul, Sith Lord Exar Kun, Maris Brood, Warb Null, Darth Nihl, Tera Sinube, Haazen, Githany, Kit Fisto. the list is quite long

You can't really say it goes out of lore, though. 1 and 2 both did something similar with new and different saber designs as well. This could be an evolution of the tech, or it could be a singular design, we don't know.
