Persona 3 Portable is the best in terms of accessibility and I really loved being able to play as a female especially since SMT is my favourite series. FES has the most content but can get annoying at times trying to balance tiredness and the inability to directly control party members. How are you finding it? Persona 4, whilst being my least favourite in the main Persona series, is still an amazing game. Metal Gear Solid 3: Snake Eater is one of my personal favourites. I've yet to play Dying Light. Kind of put off of it due to the protagonist.
