For the strikes, you said you had "1 person in your fireteam" and it counted as 3. Does that mean you did the whole strike by yourself or with 1 other friend?

With one other friend I. My fireteam, and matchmaking supplied the third random Guardian. If you do the strike with two random Guardians supplied by matchmaking it only counts as one strike.
