I would assume the fossils are in the ground, and you don't see a fish fossil developing legs, that wouldnt make sense. The changes are [b]very[/b] subtle. But you can look at how people have tail bones, how whales have tail bones and all of their hands have similar structures to almost every other species. Keep in mind you have to find fossils, they don't just show up in your lap. Not all skeletons of dead animals will fossilize. But what we have found are things like lucy. Yeah that was a lame response, because it was a lame question. Their are gaps in the fossil record, and scientist are working to fill in those gaps, that's why it is still a job. And do you really not know what a scientific theory means?? I mean come on, by that standard gravitational theory, cell theory, atomic theory etc. don't exist either.
