If you're a sorcerer, I doubt you have the strength to weild either Pursuer equipment choices.
You are right, but I could always take the time to farm souls to level it. Right now my main levels are in the skills that boost spell slots and magic damage, with a bit of vitality thrown in there. I could always go for a more balanced build. This is my first Playthrough of the game, so I'm still indecisive on a bunch of things. Completing Bloodborne before picking this game up probably helped me a ton, but I'm still getting use to DS2.
So your saying I should just choose which ever and store it as a "trophy" item?

You can use those weps in one hand if you really want to. If your a sorcerer I don't recommend using pursers weps cause they're more for str build, as for DragonTwin it's an okay wep but don't expect to dish out crazy DMG. You probably want to focus on intelligence/attune and find some other good magic weps. This is assuming you aren't going to keep on llvling but stop in a good PVP range.

What's the hard cap for each stat in this game?
-
40 dex 40 str 60 faith (faith build) 60 int (sorcery build) 30 int / 30 faith (hex build) 20 end 19 adp Don't know the rest.
-
Thought it was 32 for adp
-
Adp is gay
-
Wut? Do you want to get hit by every attack?
-
If u want to go for higher elemental defense but I frames cut off at around 19.

I'm saying if you want to make a dedicated sorcerer build, just cash the soul for souls. Neither are practical as you'd need to seriously boost Stam, End, and Strg to even properly use either weapons. Both require high stats of all three.

With the Covenant of Champions on and the Soul Boosting Ring from the old lady, I can make that back in like 30 minutes. Even if I don't use them, I'd still rather have the items and can just store them in the Bonfire Inventory. Not sure what the max level is in the game but I'm assuming it's pretty high, and I'm also assuming each skill has a hard cap at some point, so in the end I might end up leveling those stats to a decent amount.

Hey, mine as well I guess, but you can get those items in consecutive play throughs, I believe.
