I have to kill 11 ogres to get my +5 grimoire but every time I kill an ogre it doesn't go towards it

Only red health ogres cant.

You mean When they are enraged?

They count only when they have a red health bar. Major Ogres (those with yellow health bars) do not count towards the Grimoire Challenge.
