Well being omniscient he should have seen it coming, if it was against his plan then he isn't omniscient or omnipotent. If it was against his plan and he couldn't change it then he isn't omnipotent and if he couldn't see it before it happened he isn't omniscient

it's not that he couldn't, it's he shouldn't have had to. He gave humans free will, when Satan deceived Eve it was a test and they failed and God altered the plan. Because he loves us so much and hates sin, there was no choice but to send Jesus Christ to die for our sins because God cannot be associated with sin.

You cannot claim "there was no choice". An omnipotent being, by definition, could do anything in any given situation.
