What is the knight fall protocol cuz I don't want to activate it till I know what it is

Basically Batman locking up all major criminals, making Gotham safe-ish, and then dying. Or faking his death. Ending was ambiguous as shit. He enters his manor and blows it up with himself inside.

And then after that do u get to play as batman's that person with the burning bat signal

No, that questline finishes with a choice. You can either: A.) Try to kill Batman, and fail and get sent to GCPD or B.) Betray the Order of St. Dumas and become an ally of Batman. If you choose B, Azrael leaves Gotham to destroy the Order of St. Dumas. If you choose A, Batman locks Azrael away in a GCPD cell.
