1) it'd probably be more around 100. A single Jedi took down an entire Stardestroyer. "Size matters not" -Yoda

2) there would be probably around 1 million Jedi and Sith if we were to take every Jedi and Sith who ever lived. And that's not even including the random obscure force users referred to a few times who are more powerful than the Jedi and Sith.
