The direct piece you're thinking of is from Last Word 2 and the quote goes "that was the first time I held 'Last Word'"
So no. It was never a Rose, also Rose became Thorn. Shin couldn't have been given Last Word had it become Thorn.

Also since it's a grown Shin Malphur telling us that story it makes sense he calls the gun the name he gives it rather than the forbidden name of his mentor's that mutates into thorn.
