There is only 77 ghosts. Some profiles say more because there is a ghost that is glitched and can be picked up more then once. It doesn't add grimoire points or anything, it just adds to your total ghosts

I've got 77 yet am missing 5 grimoire on ghosts I've got all of them tho

If you're seeing the missing grimoire on a 3rd party site or Bungie.net this is because of an issue with the ghost fragment: reef 3. Your grimoire is still correct though, however websites are having problems recognizing the ghost and the grimoire rewarded from it.
