Spartans rarely die. There are actually several left, not counting the new generation of Spartan IVs. And guardians can definitely die permanently. Their revival depends on the ghost (and some ambiguous period of time to revive the guardian). When the ghost is destroyed, the guardian is absolutely dead. Gameplay reasons prevent your guardian from permanent death (if they were real sentient enemies of the darkness, they'd go for your ghost first, then kill you).
