I don't know German very well but from my limited knowledge, I think the "du" after "wie geht's" is unnecessary, as the literal translation of wie gehts is "how goes it" and you wouldn't say "how goes it you" in English.

You can say both. "Wie geht's dir?" (not "du") or "Wie geht's?"
