Really you just pick an animal (or hybrid of animals) that you either like, think represents you in some way, or: insert other reason for choosing an animal here... The personality and gender can basically be whatever you want. Also sometimes they have special abilities or skills. An example is that I chose a catwolf for my fursona because I think of cats as introverts and wolves as extroverts, and I think I am caught between.
