I don't want to be able to carry stuff over, otherwise it's just another dlc and not a new game

No, it's a new game with a ton of new stuff, just like they said it would be I'm the begining. You at light 400 level 40, will be the same a brand new character at the start of destiny 2, the only diferent is you'll look cooler and have stuff to start with. The new character will have to use the starting gun.

Couldn't you just delete all your stuff to get the same effect?

No as everyone else would be an infinite amount ahead, I'm all for having some of the same gear from destiny 1 in destiny 2, maybe even being able to acquire it at some points if you previously owned it. But certainly not just a straight transfer over.
