Im in school currently for modeling. -raises hand- I agree 100% with you. If you all really wanted a complete raid, we would have to wait probably 6-8 months for dlcs. Destiny raids aren't like MMO raids. MMO raids have their mechanics focus solely on bosses and the arenas are mostly cosmetic. Destiny however, is a FPS and Bungie implements challenges to go through to get to the final boss like a dungeon. Thus there is more thought put into creating the environments over bosses than your standard MMO. This results in more work for modeling, rendering, and play testing. (Likely why get some buggy releases on raid days)
