2 Valor Resets and no credit towards "The Beginning of the End"? This very long and tedious crucible quest asks for 5 Valor resets in one season, I have reset twice now and haven't gotten any progress towards it?

As far as I know this isn’t retroactive. You may want to try clearing your cache and checking your quest step again. https://www.bungie.net/en/Help/Article/12539
