Personally, for look I would want to go Cat, but for the actual school I would want to go Wolf.

A little something I pulled from Reddit for more info.
Each school appears to have different focuses. The Wolf School appears to be balanced, focusing on all aspects of training equally. Their primary fighting style, the Temerian Devil, is strong and efficient; dealing as much damage as possible in a single blow. The Cat School focuses on Addan Anye, or the Fiery Dancer, a fast fighting style where you do less damage but more frequently, also limiting your opponents chance to strike back. This is further enforced by their armor and weapons in W3. The Cat School is also one of the only two schools to use crossbows. The Griffin School focuses on Viroledan Naev'de Feaine Glaeddyv, or the Nine Sun Sword, which is the group style. Focusing less on taking down a single enemy this fighting style is meant to be able to strike down many enemies at once and proves most useful on drowners, wolves, and other monsters that tend to swarm in groups. Their armor and weapons in W3 seem to suggest they have a greater focus on signs as well. The Bear School did not have a fighting style in W1, which is where the above information came from, but their armor (heavy) in W3 appears to indicate a more brutish, head-on combat style. They are only other school, aside from the Cat School, to incorporate crossbows into their fighting styles. The Viper School supposedly had a wealth of information. From what we see of the survivors of the school in W2 they seem to be more like assassins, although this may be purely because they have become assassins and have nothing to do with their school. Unfortunately, this is mostly speculation based on the combat styles in the first game and the armor/ weapons in the third. We really don't have enough information on the schools to say if there's any real difference. The sword styles could simply be origin and all of them were taught in all school later. The armor may be of a specific Witcher and not of the school has a whole.
Of them, either Viper or Bear for me. I like sneaky assassin style stuff, but I also like brute force about the same amount.

All terrible. Being tortured against your will isn't something anyone should aspire to be.
