Recipe
4 cloves of minced garlic
15 capers
4 diced tomatoes
10 cored and halved kalamata olives
1 large onion, diced
Anchovies
Fresh basil, chopped
1 tbsp olive oil
Pinch of salt and pepper
Any pasta you are comfortable using.
1 pot of boiling water
Shredded Parmesan cheese
1. WASH YOUR FREAKING HANDS BEFORE HANDLING FOOD
2. Chop and dice the ingredients if you haven’t already.
3. Grease saucepan with olive oil and set over medium heat.
4. Add onions and garlic to the pan. Cook until fragrant.
5. Add tomatoes to the pan. For about 2 minutes or 4.
6. Add pasta to pot.
7. Carefully drain the excess water from the pan.
8. Add olives and capers to the pan. Be sure to stir it occasionally.
9. Cook for 2-3 minutes.
10. The -blam!- esca sauce is going to be extremely fragrant and sharp to taste. Once the aroma hits you that’s when it is ready to serve.
11. Strain pasta.
13. Top past with sauce.
14. Garnish with cheese, basil, and/or anchovies.
