Have you ever wanted a virtual zoo and didn't make one because you didn't read an arbitrary how to guide from some guy on a video game forum completely unrelated to the subject at hand? Well I'm that guy and your in luck!
First things first, some ground rules. Keeping certain mobs in boats would make things much easier, but I feel like that would diminish the purpose of it. So boats should only be used for transportation. Secondly, nether mobs are optional since several can't be put in the overworld. Overachievers are more than welcome to add a nether branch.
You will need a few standard things
Boats
Minecarts
A giant building
Name tags
For easy mobs, a boat and basic luring strategies will suffice, I won't bother to talk about the super easy ones.
Skeletons
Get one to see you, hide around a corner and he will walk into your boat or room. Take your back door.
Spiders
Due to their tendency to climb and sometimes kill themselves, their room either needs to be small or have slime block floors.
Witches
Although these mobs are normally dangerous you can bypass much of the danger through the use of villagers. Strike one with lightning and you get a witch.
Slimes
Slimes are rather stupid and unfortunately located underground. Dig a stairwell and strip mine till you hear a slapping sound. Lure your target to your stairwell and you get the rest.
Phantoms
This deceptively easy mob to trap seems formidable intially but in reality requires nothing more than a well timed boat placement.
Creepers
Nerve wracking though they are they still fall prey to most trapping strategies. I highly recommend invisibility potions. With them you can approach a creeper in his boat and pull it with a lead.
Cave spiders
These freaks are faster, deadlier and harder to find than their plain cousins. The instructions are similar to the slime.
Pillager crossbow guy
Finding the outpost is the hardest part, although I would not stay long if I were you.
Pillager axe guy (Johnnies)
Kill all but two dudes in a raid, boat one and get out, be sure to keep your distance using a lead or a minecart.
Illager beasts
These monsters are big enough that I feel it a bit dangerous to attempt using boats or minecarts. If you do you, you will have an awful time later trying to get it out without killing it or yourself in the process. Otherwise see previous.
