From what I've gathered around here, batman appears to be able to 'solo' just about anything and everything, no matter size or numbers.
What gives? Why is he so unbeatable?

Because in the end he technically always wins. But that logic can be applied to any and all fictional characters with a happy ending. Batman has technically beaten far superior enemies before, but this was done with a deadly combo of extended planning periods (sometimes even months) and a hefty degree of plot armor. Take both of those away and Batman loses far more often. On top of that, Batman loses all the time, but only "wins" through the intervention of fellow superheroes. He's even considered to be the "most saved" superhero on the Justice League, making him the damsel in distress of the group--he just kicks a little more ass. So really he's only as good as people say he is in the minds of fanboys.

His character is supposed to represent humanity. We're not the most dominant species on the Earth because we're strong, fast or agile physically. We're at the top of the food chain because of our brains. That's why he's so powerful. Mind over matter essentially.

Because he is supposed to be the embodiment of Justice. The madder he gets, the smarter he gets. He's like the intellectual equivalent of the Hulk. Given enough incentive he could destroy the universe. The only persons who could beat him are either Punisher or Deadpool from the _____ kills the Marvel Universe comics. Only because they are the same type of character.
