I'd have to go with:
Skyrim
Legend of Zelda: Majora's Mask
Paper Mario: Sticker Star
Sonic Adventure 2: Battle
Minecraft
Most have to do with a tedious amount of grinding, or getting stuck at a particular point (usually due to glitches). How about you?

Minecraft and Borderlands 2 I still love the two but I've grown senile and I get disappointed at all the missed opportunities and wasted effort by the devs. For MC, things like horses and fireworks are just make me angry because they're damn near useless and are just there to cater to the largely younger fanbase who think those features are cool. They will add these things and 7 flowers that all serve the exact same purpose (light gray dye) but it takes them several months to finish fully implementing nether brick, slabs/stairs, villagers (which are still effectively livestock), ect. With Borderlands 2, it's the grinding and grinding for unsatisfying equipment and realizing all you're going to do with it is grind something else.
