Between Dark Souls I and II and Monster Hunter Freedom Unite and Tri, anything that moves and some things that don't. But then, all of those games are really just a series of boss fights. So, Ornstein, Royal Rat Authority, Tigrex, and Lagiacrus, respectively. But my archnemesis will always be the Drake miniboss from Dragon's Dogma on Hard Mode as Fighter Class.

My hardest boss was in the elder scrolls online beta in a single player dungeon the boss kept healing so it was impossible to kill her
