Not crispy but not soft. Somewhere in between that allows the fat to stay soft. If I could I would eat bowls upon bowls of bacon fat ripped right off the fresh meat

Oh my. I have mixed feelings because on the one had it would taste great but on the other hand it would probably cause a heart attack by the second bowl.
