Because God gave them free will. Free will gave them the CHOICE.

Right. But it's an all-powerful god. Or am I mistaken?

If he wanted to monitor them, he would not have given them free will. BUT HE DID. he gave them a choice. He decided NOT to predict it.

But it knew what was going to happen, right off the bat. A god that willingly ignores the misery it causes is terrible.

No he did not, because he gave them FREE WILL. he knew they may choose the fruit and he knew they may not choose the fruit. And god again gives the people FREE WILL. so he does not KNOW.

If it doesn't know then it isn't all-powerful.
