How large would you say the flood onslaught will be when humanity is tested?
Like Forunner-Flood War big? Bigger?

I don't know but pretty fricken big. It's described as large enough to bring humanity "unity". However, how you interpret "unity" is up to you. That could mean a force large enough to absolutely assimilate humanity into the Flood, or bring unity by forcing humanity to unite with the entire galaxy to repel the Flood.

Ah well do you think humanity would even be ready for another encounter with the flood? Most individuals who encountered the flood are likely dead and if Spartan Assault is anything to go by then the Infinity actually had training simulations that included the flood.
