Yes you can, but levelling up doesn't necessarily help as much as you'd think. Good awareness and timing, as well as practice of the boss itself helps considerably more!

Not to mention... I saw a video of someone doing this online. Dark Souls has tons of fan-made tutorials and walkthroughs online. And some of these are quite necessary to explain the nuances of things like parrying and Endurance that the game doesn't do a great job of explaining on its own. I see few reasons to give up altogether...
