I disagree. Ocarina of Time had some challenging puzzles like the water temple (if you didn't use a guide.) The mechanics for horseback riding and archery were fun & getting that final quiver from the archery challenge took some skill too. Majora's Mask gave the NPCs a lot more purpose, having malleable agenda's thoughout the three days. Once again fun dungeons and great gameplay.
The same can be said for Twilight Princess & Skyward Sword. The Wii motion plus sword fighting was pretty fun for Skyward Sword too. Beyond that, great soundtracks, compelling story, lots of collectibles & weapons/tools & it wasn't focused on leveling for progression; your journey yielded the progression. One of my favorite things was using the double hookshot.
If you found them too easy, (I know this works for Orcarina of time) try naming your save file 'Link'.
