Really late to the party but does rerolling 300 attack guns update them to the new versions?

No, it does not. They stay as 300 Attack versions and they should keep their old perk pools intact as well. Meaning it's actually impossible to now obtain some combinations (Like Reactive Reload Timur's Lash) unless you have an old model to roll.
