I'd imagine an Unfriendly Giant would kill the ogres in two shots on normal...
With regards to making them sidestep, why not just use a Gjallarhorn/Hunger of Crota and kill them, then you don't have to worry about them sidestepping long enough. Different strokes for different folks I guess.

I don't have gjallarhorn. But it takes a full 6 rounds to drop an ogre on hard. Also, Gjallarhorn has no area denial effect on ogres so they tend to keep attacking you. I've run the abyss solo dozens of times and using dragons breath made it a lot easier to me. Two rounds to keep him back with DB vs 6 ghorn rounds to kill.

You are free to your opinions, I think the vast majority of experienced raiders disagree with you though. Having said that, keep doing whatever you need to do to have fun.
